Our July individual cooking class programmes are up on the internet – click on the month for the programme –  July

Wickedfood Cooking School runs classes with a minimum of 8 participants and a maximum of 12 as this gives everyone hands-on experience  and keeps the class small enough for maximum learning.

Monday 12 July at 6pm Jamie’s Ministry of Food – quick meals and pastas (R350pp). We consider Jamie Oliver’s latest book his best. It is a perfect book for any beginner. Each month we take six recipes from the book and re-interpret them, with plenty of tips along the way. Learning the secrets to successful of easy cooking, including spicy Moroccan stewed fish with couscous, chicken and leek stroganoff, broccoli and pesto tagliatelle, classic tomato spaghetti, macaroni cauliflower cheese bake and banana tarte tatin, with a wicked twist.

Sunday 18 July at 4pmEntertaining Italian style (R350pp). Great dishes for entertaining with Italian flair including rice croquettes, Siena bread soup, semolina gnocchi, poached chicken with a caper/egg sauce and baked pears.

Tuesday 20 July at 6pmSushi 1 – The basics of sushi making (R375pp – maximum 18, so book early) The basics of sushi making – cutting fish, making rice, California and maki rolls, nigirizushi (finger), and hand rolls.

Monday 26 July at 6pmA taste of the sea, Portuguese style (R395pp per person per class). A selection of tasty seafood dishes from the Portuguese table, including codfish balls, squid tentacles, Madeira squid stew, prawns peri-peri, and tuna steaks.

Green ideas for your kitchen? Green Cooking Tips – How to Cook Greener, Save Energy and Reduce Your Carbon Footprint.

Green Kitchen Cleanup Tips
1.    If you only have a couple of plates and cups, wash them by hand instead of running the dishwasher.
2.    When hand-washing, fill the sink instead of washing and rinsing under running water.
3.    Compost fruit and vegetable peels and leftovers. Good for your garden, good for the planet.
4.    It’s actually kinder to the environment to run the dishwasher for a full load of dishes than to wash them by hand.
5.    Recycle as much as possible – glass, cans and cardboard are all recyclable. The more you recycle, the less goes into the landfills to clog up our earth.

Awesome website of the week: Being a foodie one must know by now the super recipe site Epicurious. I usually like to highlight Proudly South African websites, but this site is hard to ignore. From quick weeknight menus through to healthy dinners Epicurious has got you covered. Be aware that because its an American website the measurements will be a little foreign.

Food Joke: The Bachelor’s Guide to Food!

POTATOES: Fresh potatoes do not have roots, branches, or dense, leafy undergrowth.
RAISINS: Raisins should not be harder than your teeth.
SALT: It never spoils.
UNMARKED ITEMS: You know it is well beyond prime when you’re tempted to discard the Tupperware along with the food. Generally speaking, Tupperware containers should not burp when you open them.
GENERAL RULE OF THUMB: Most food cannot be kept longer than the average life span of a hamster. Keep a hamster in or near your refrigerator to gauge.

Wickedfood Cooking School runs Johannesburg cooking classes throughout the year at its purpose-built Johannesburg cooking studio. Cooking lessons are run in the mornings and evenings 7 days a week (subject to a minimum of 12 people). The venue is also popular for corporate events and private functions – team building cooking classes, birthdays, kitchen teas, and dinner parties with a difference.

Our classes are hands-on, where every person gets to participate in the preparation of the dishes. They are also a lot of fun where you not only learn new skills, but get to meet people with similar interests. For corporate groups and team building cooking classes these events are a novel way of creating staff interaction or entertaining clients.
