Cooking for Christmas Workshop

Christmas, more than any other occasion during the year is a time for friends and family. It is a time of giving as well as sharing good food and company. For many, the meal can also be a stressful occasion. In this Xmas cooking workshop Wickedfood Earth Country Cooking School will guide you through a number of delicious dishes that you can make ahead of time, thus releasing you from the kitchen to enjoy the celebrations with the rest of the family and friends.

Dishes that will be covered in this this cooking workshop include the following:

  •  De-boned stuffed chicken – we will show you how to de-bone a chicken, as well as make two very different stuffings, and share with you the secrets of how to cook the chicken perfectly for either a hot meal or how to serve cold;
  •  Christmas hams –  at Wickedfood Earth Farm, we produce two very different hams for Christmas:
    • Brined green ham –  the ham that first needs to be boiled, before it is brushed with a glaze and then roasted in the oven (see picture above),  we show you how to glaze and roast the ham once it has been boiled;
    • Hot smoked cured ham –  these hams are already cooked, they are delicious served cold, with either a mustard sauce, sweet pickle or marjoram salsa –  We show you how to make all three;
  • Tomato and basil tartwith mozzarella, ideal for a buffet, can be made ahead of time;
  • Traditional Christmas pudding – a quick microwave version, with a classic brandy cream sauce.
  • Frozen coffee cake – with brandied boudoir biscuits, served with grilled summer fruit compote.

Apart from learning the above skills, participants will also have the opportunity of:

  • De-boning and stuffing their own chickens in this cooking class to take home with them (R250 for a ±3kg finished bird);
  • Ordering whole Xmas hams are between ±2,2kg and ±4,5kg.
    • Brined green ham – brined  in a mixture of spices and apple juice before being dry aged, vacuumed and flash frozen to lock in flavour (limited numbers, at R120/kg – contact me asap to place an order together with approximate size).
    • ham smoked 1 Hot smoked hams – vacuumed and flash frozen to lock in flavour, so ready to eat cold. Our hams have no preservatives, or liquid smoke (limited numbers, at R150/kg – contact me asap to place an order together with approximate size).

The programme for the day is as follows:

  • 9:00am – Tea, coffee, fruit juice and eats on arrival and during the workshop;
  • 9:30am – Introduction;
  • A practical hands-on demonstration on  the various techniques, as laid out above;
  • Sit down and enjoy a lunch of the various dishes cooked during the cooking workshop.

Wickedfood Earth Country Cooking School is running a one day hands-on biscuit-making workshop on Saturday 12 December from 9:00am, teaching the finer arts of how to make 4 classic German Christmas biscuits.
