Salami workshop

Wickedfood Earth Farm has become synonymous with free-range pork and top quality charcuterie, including our range of sausage, coppa, pancetta, bacon and salami. Wickedfood Earth Farm Country Cooking School  offers hands-on charcuterie courses where we share the knowledge we have accumulated over the last 4 years on processing pork. Due to popular demand we will be running our Charcuterie workshop in August and Salami making Workshop in September.  The next Gauteng Charcuterie course will be on Sundays,  14 August 2016, and Salami making course on Sunday 4 September. All participants will get to take home meat processed during the class to cure and enjoy with friends.

Salami and dried sausage workshop

 Techniques covered include:

  • The basics of making the perfect sausage for droewors, carbanossi  and salami, and the difference between them;
  • How spices work and different blends for different types of dry sausage/salami;
  • Making 3 classic dry sausages, to take home with you – classic South African droewors, carbanossi and salami.
