Wickedfood Earth Farm has become synonymous with free-range pork and top quality charcuterie, including our range of sausage, coppa, pancetta, bacon and salami. Wickedfood Earth Farm Country Cooking School  offers hands-on charcuterie courses where we share the knowledge we have accumulated over the last 4 years on processing pork. The next Gauteng salami workshop will be on Sunday 4 September. All participants will get to take home meat processed during the class to cure and enjoy with friends.

 

Full day Salami and dried sausage workshop. Techniques covered include:

  • The basics of making the perfect sausage for droewors, carbanossi  and salami, and the difference between them;
  • How spices work and different blends for different types of dry sausage/salami;
  • Making 3 classic dry sausages, to take home with you – classic South African droewors, carbanossi and salami.
