The tomatillo, also known as the Mexican husk tomato, is a plant of the nightshade family bearing green, yellow and purple fruit similar in look to the cape gooseberry. Tomatillos originated in Mexico. A staple of Mexican cuisine, they are eaten raw or cooked in a variety of dishes.
At Wickedfood Earth Farm we have been growing a wide variety of organic tomatillos for the last 10 years. These tomatillos are pickled in a sweet and sour thin syrup. Pickling mellows and changes the flavour, giving it a delicate, elusive perfume. Use in salads or as part of a mezze platter. Also great for Mexican salsas:
- Fresh Salsa Verde – Chop half a bottle of sweet & sour tomatillos with one onion, 1 clove minced garlic, 2 tomatoes, 1 to 3 chillies, a handful of chopped coriander, 2-3 tablespoons of the sweet/sour syrup, and season.
- Green salsa with Avo – Chop half a bottle of sweet & sour tomatillos with one finely chopped onion, 1 clove minced garlic, 3 tomatoes, 3 to 6 chillies, and a handful of chopped coriander. Fold in 1 mashed avocado pear, and season

Description
Our Sweet and Sour Tomatillo are made at Wickedfood Earth Farm. Our food gardens and orchards are planted with a wide variety of heirloom vegetables and herbs, and the extensive orchards have over 50 varieties of fruit and nut trees, and berries. The Wickedfood Earth Farm food gardens are internationally recognized by Slow Food as an important educational garden. At Wickedfood Earth Country Cooking School we bottle all excess fruit and vegetables at the peak of their ripeness. All our fruit and vegetables are grown along organic lines free of insecticides, fertilizers, or any other poisons. We hand-make small batches of Sweet and Sour Tomatillo as well as a wide range of preservative-free preserves, jams, chutneys, relishes, sauces, and other bottled fruit. This ensures that we do not need to over-process, which results in concentrated, natural flavours.
