October is the last month For individual classes so look out for any special ones. The Christmas classes are going to fill up fast so make sure you book early so that you can impress the whole family with some mouthwatering dishes.

Our October individual cooking class programme is up on the Internet – click the relevant school for the October programme Sunninghill / Boksburg.

Wickedfood Cooking Schools run classes with a minimum of 8 participants and a maximum of 12 as this gives everyone hands-on experience  and keeps the class small enough for maximum learning.

Sunninghill –

  • Monday the 12 October at 6pmAlternative Christmas dinner 1/2 (R390pp). Ideal for a hot weather Christmas, including chicken liver mousse, sun-dried tomato soup, de-boned turkey, roasted medallions of fillet, and Christmas bombe.
  • Sunday 18 October at 4pmClassic French cooking – (R370pp). An introduction to French cuisine including cheese soufflé, potato and leek soup, coq au vin, potato gratin, and tarte tatin.
  • Sunday 25 October at 4pmFormal traditional Christmas dinner 1/1– (R390pp). Formal traditional Christmas dinner including Christmas tapas, prawn cocktail, rolled stuffed turkey breast, gammon and steamed Christmas pudding with a classic brandy cream sauce.

Boksburg –

  • Thursday 15 October at 6pmAlternative Christmas dinner 1/2 (R390pp). Ideal for a hot weather Christmas, including chicken liver mousse, sun-dried tomato soup, de-boned turkey, roasted medallions of fillet, and Christmas bombe.
  • Saturday 17 October at 9amClassic French cooking (R370pp). An introduction to French cuisine including cheese soufflé, potato and leek soup, coq au vin, potato gratin, and tarte tatin.
  • Wednesday 21 October at 6pmJamie’s Ministry of Food – Healthy 5-day cycle (R350pp). We consider Jamie Oliver’s latest book his best. It is a perfect book for any beginner. Each month we take six recipes from the book and re-interpret them, with plenty of tips along the way. With this class being the last in the series we will look at quick, easy and healthy meals to prepare for a 1 week cycle.
  • Thursday 22 October at 6pmSushi 1 – The basics of sushi making (R395pp). The basics of sushi making – cutting fish, making rice, California and maki rolls, nigirizushi (finger), and hand rolls.

Our favourite ingredient: – Nutmeg or Myristica fragrans is an evergreen tree indigenous to the Banda Islands in the Moluccas of Indonesia, or Spice Islands. Until the mid 19th century this was the world’s only source. The nutmeg tree is important for two spices derived from the fruit, nutmeg and mace.
 Nutmeg is the actual seed of the tree, roughly egg-shaped and about 20 to 30 mm long and 15 to 18 mm wide, and weighing between 5 and 10g dried, while mace is the dried “lacy” reddish covering or arillus of the seed. This is the only tropical fruit that is the source of two different spices.

Food tip of the week: – Don’t add oil to the water when cooking pasta – Once the water has come to a rapid boil add 1/4 cup salt/per 500g dried pasta to the water (Italians say it should be as salty as the Mediterranean sea) stir occasionally, once cooked drain the pasta and mix sauce in, if your sauce is too thick add 2-3T of the cooking water to thin it out.

Wickedfood Cooking School runs cooking classes throughout the year at its purpose-built cooking studios. Classes are run in the mornings and evenings 7 days a week (subject to a minimum of 12 people). The venue is also popular for corporate events and private functions – team building cooking classes, birthdays, kitchen teas, and dinner parties with a difference.

Our classes are hands-on, where every person gets to participate in the preparation of the dishes. They are also a lot of fun where you not only learn new skills, but get to meet people with similar interests. For corporate groups and teambuilding cooking classes these events are a novel way of creating staff interaction or entertaining clients.
