In Mexico Salsa Verde is the go-to sauce on nearly every table from home to top-end restaurants, as a less sweet, hotter version of ketchup found on most tables in the USA. Salsa Verde is a blend of tomatillo, chillies, garlic, onion and spices. It comes in a variety of guises from the basics of raw vegetables, freshly chopped and blended, to a complex cooked chunky sauce, with a pleasant sweet/sour, smoky flavour as we bottle at Wickedfood Earth Farm.
The tomatillo, part of the cape gooseberry family, is also known in Mexico as miltomate, tomate verde, or tomate, and is more popular than red tomato in Mexican salsas. They give the salsa a delicious thick consistency as they have a lower water content and a better sweet/sour balance than tomatoes.
At Wickedfood Earth Farm we have been growing a wide variety of organic tomatillos, chillies and garlic for the last 10 years. Over the years we have developed our Roast Mexican Salsa, a complex sugar-free Salsa Verde. We blend the different varieties of tomatillos and chillies to create our own unique spicy sauce. We roast the vegetables which concentrate the natural sugars and acids, then coarsely chop and balance the heat with a mix of different chillies. Lastly, we add our unique spice blend before bottling to lock in the flavour.
A great spicy sugar-free alternative to tomato sauce. Eat with:
