This jasmine rice makes the perfect accompaniment to many of our main meals, based on a classic Thai recipe, that has become a firm favourite at Wickedfood Earth Country Cooking School. It is flavoured with small chunks of red peppers, carrots, garlic, ginger, lemongrass and coriander, and has egg threads running through it. For a quick light lunch dish fold in some shredded leftover roast or steamed chicken, lamb or grilled fish.
