Thai Style Fried Rice
Cooking method: Once defrosted, heat in a microwave until piping hot.
This jasmine rice makes the perfect accompaniment to many of our main meals, based on a classic Thai recipe, that has become a firm favourite at Wickedfood Earth Country Cooking School. It is flavoured with small chunks of red peppers, carrots, garlic, ginger, lemongrass and coriander, and has egg threads running through it. For a quick light lunch dish fold in some shredded leftover roast or steamed chicken, lamb or grilled fish.
The rice was very tasty and went well with the Thai chicken dish. The portion was very generous and sufficient for two meals.
