Thai Style Chicken and coconut milk soup

Serving suggestion: on its own or with rice or egg noodles, and a slice of lemon on the side.
Cooking method: Defrost first, then in a pot, heat over low on a stovetop with the lid on until completely defrosted, stirring occasionally. Raise the heat, lift the lid and stir until the dish comes to a boil.

This is our version of the classic Tom Ka Gai, which is a delicious head-clearing meal-in-one soup if served with rice or noodles. It is slightly sweet/sour with a hint of chilli and full of flavour from our homemade chicken broth. Apart from chunks of chicken we also add a selection of organically grown vegetables.
This soup is very tasty and so nutritious that it is a meal on it's own. Ideal for lunch or a light supper as there is plenty of chicken in it.
