Salami – Nduja


A classic Southern Italian style, hand made, sweet-spicy, buttery, spreadable salami, made with finely ground veld raised pork, ground dry paprika and chilli. Nduja (pronounced n-du-we or for its full Italian name – Nduja di Calabria Spreadable Salami) is one of the more unusual salami preparations. We like to use smoked cured bacon fat to give the salami a delicious smoky flavour note.

Our Salami – Nduja and salami making in general, is a true artisanal skill, using similar techniques to those found in the making of sourdough bread, sauerkraut, kimchee, wine, and beer. Salami is a seemingly simple mixture of meat, fat, and aromatics, cured with salt, fermented, and then dried. It is the balance of these ingredients, quality of meat, and temperature control that is the true test. At Wickedfood Earth we believe we have produced a salami to be proud of – matured slowly for around 6 weeks in our drying fridges to concentrate the fabulous flavour of our veld raised meat. Serving Suggestions


  • Enjoy spread thick on fresh sourdough bread as part of a bruschetta platter, maybe add a slice of strong cheddar cheese,
  • For breakfast, spread on a slice of toast, topped with a fried or poached egg;
  • Melt ±100g Nduja in a pan and stir in a 350g bottle of passata sauce. Toss in ±250g pasta, cooked, for a delicious quick meal;
  • Thinly slice and use for a pizza topping, with tomato and grated mozzarella cheese.
