Figs are part of the mulberry family. Originating from Western Asia, they are now grown around the world. At Wickedfood we grow the big green and purple figs which are honey-sweet when properly ripe. They have a very short shelf life, so what we can’t eat we turn into this delicious jam and Konfyt, which we balance with ginger for added flavour. Konfyt is a South African classic. This sweet preserve is with whole just ripe figs in a ginger syrup, with just a hint of sour to cut through the spicy sweetness.

Description
Our Fig Konfyt comes from the figs grown at Wickedfood Earth Farm. The food garden and orchards are planted with a wide variety of heirloom vegetables and herbs. The extensive orchards have over 50 varieties of fruit and nut trees, and berries. The Wickedfood Earth Farm food gardens are internationally recognized by Slow Food as an important educational garden.
At Wickedfood Earth Country Cooking School we bottle all excess figs at the peak of their ripeness. All our figs are grown along organic lines. Free of insecticides, fertilizers, or any other poisons. We hand make small batches of fig konfyt as well as a wide range of preservative-free preserves. These include jams, chutneys, relishes, sauces, and bottled fruit. This ensures that, by not over-processing, the result is concentrated, natural flavours.
