Wickedfood Cooking School news

 Sunday 26 January at 4pm Sweet treats – working with Chocolate (R430pp).Chocolate is not the easiest substance to work with, but knowing a little about it before you begin will save you a big headache later on. Learn the secrets of working with chocolate in this chocolate cookery class, which includes decadent chocolate cake, chocolate truffles, brownies, choc chip cookies and layered chocolate mousse.

Monday 03 February at 6pm – Gordon Ramsay – Cooking for Friends (R430pp). This Gordon Ramsey cooking class is based on his book Cooking for Friends. Love him or hate him, he certainly knows his food. In this book, we see a very different side of him, more relaxed, cooking some best-loved versions of classic British dishes for family and friends.

Friday 14 and Saturday 15 February at 6pm – Romantic Valentine’s dinner, easy summer entertaining (R840 per couple).
Join the staff at the Cooking School with the love of your life for a Valentine’s dinner with a difference. Not only will you get to enjoy a delicious 4-course dinner, but you will learn the secrets of how to cook it. Included in the price is a welcome
glass of sparkling wine, house wine while preparing the food, and some specialist wines, complementing the food, with the meal. Space is limited to 30 students per class, so book early.

Wickedfood Earth Country Cooking School

Boy, are we struggling with this heat. It has been so dry that one small spark on the neighbours farm started a horrendous veld fire, the likes of which we usually only see during the winter months. Fortunately we managed to stop it before it reached Wickedfood Earth. Last week, we once again had a few births, this time 5 piglets. Our vegetable gardens are supplying us with lots of fresh beans, okra, squash, peppers, tomatoes and carrots. On the fruit side, we are enjoying the last of our peaches, are still getting a few figs, and the raspberries are starting to bear.
Country Cooking School
 It it is with great anticipation that we will be well welcoming our first students to the Wickedfood Earth Country Cooking School, this Sunday 26 January, for our sucking pig workshop (we still has 4 spaces open, if you are interested). The  February schedule is as follows:
  • The perfect roast chicken – Sunday 9 February  – in this class will give you great ideas on cooking chicken, both in the oven, and how to smoke it in a kettle braai, so that it stays perfectly moist and juicy, with a crispy skin;
  • Valentine gourmet weekend – Evening of Friday 14 to Sunday lunch on 16 February  – spend a weekend of pure indulgence with the love of your life sampling great food and cooking up a storm;
  • Seasonal cooking – 23 February –  we look at how to make the most of fresh seasonal produce. This is a great class for both kitchen beginners, as well as those looking for new ideas in the kitchen.

Classes are small, with a maximum of 16 students, each 4 to 6 students have their own fully equipped kitchen station, to ensure that every student gets to participate in the preparation of every dish. Apart from the cooking classes, students also get to sit down to enjoy the meal they have prepared.

Suckling pigs  – the perfect roast for a small family
Not only is suckling pig a great centrepiece for a celebration for up to 20 people, it is also a perfect option for a small family, giving 6 perfect roasts, each serving between 4 and 6 people. Once again we have a few suckling pigs ready for slaughter. This week we will be slaughtering 4, and from then on every two weeks we will have 2 to 4 available, to approximately the end of February, or once they have all been sold. They are weighing between 7kg and 12kg, slaughtered @ R80/kg. You can either purchase them whole, or we can break them down into 6 roasts, and vacuum pack for you.  Every year Wickedfood Earth sells products at selected food markets around Gauteng. The first one we will be participating in this year is 

an exciting new food market in Hartbeespoort, on Saturday 1 February. At this market we will be selling seasonal farm fresh produce, cured meat & sausage from our free range pigs, fresh frozen pork cuts, and our famous pulled pork sandwich. This will be a full day market, and a fantastic family day’s outing. Hope to see you there.
