Roasted red pepper, garlic & sun-dried tomato relish (hot)


This roasted chunky blend of red pepper, garlic & sun-dried tomato, is somewhat difficult to make, involving a great amount of manual labour, especially related to peeling the roasted vegetables. This relish is made by roasting or burning the vegetable skin which gives this sweet and tangy relish a pleasing smokiness. Depending on the capsaicin content in bell peppers and the amount of added chilli peppers, it is on the hot side hot, beware. Delicious spread bread spread, as a dip on a mezza platter, with cheese, or served on the side with chicken, grilled fish, or roast meats, bacon and eggs or quiche.
