Introduced to South Africa by the Malays about a century ago, atchar is a condiment served alongside many curry dishes but not exclusively and sometimes eaten just with bread. Prepared in the summer months and matured by exposing to sunlight for up to two weeks while maturing. The high concentrations of salt, oil, and spices act as preservatives.
